Persimmon Pudding

Persimmon Pudding

This recipe was shared with me by a close friend that I work with. We received this fruit in our bountiful basket last week and it is one we are not very familiar with here in North Dakota. Do any of you have a favorite recipe for persimmons?


  • 1/2 stick butter
  • 2 eggs
  • 2 cups persimmon pulp (mash through a colander)
  • 1 3/4 cup sugar
  • 2 cups flour
  • 2 1/2 cups milk
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 dash salt


In a 13x2X9 inch pan melt butter in a 325 degree oven.  Mix pulp, eggs,  sugar.  Add milk.  Mix dry ingredients and add to wet.  Pour into pan of melted butter.  Bake for 1 hour.  Serve with syrup recipe below.


  • 1/2 cup sugar
  • 1 tbsp. flour
  • 1 cup water
  • 1 stick butter
  • dash of vanilla
  • das of salt

Bring to boil and cook until clear.
