Roasting garlic bulbs results in a mild flavor that can be used on French bread, baked potatoes or in dips.

Heat oven to 350°. Cut a half-inch from the top of the garlic bulb to expose cloves. Carefully remove most of the paper-like skin, leaving the bulb intact.

Place, cut side up, on a piece of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Wrap securely in foil and place in small baking dish. Bake 45 to 50 minutes, or until soft. To serve, separate the garlic cloves and press the cloves lightly to squeeze the garlic out onto bread or other foods.
