Best Apple Salad

4 firm tart apples (Jonathon or Granny Smith)

1/2 lemon (juiced)

4 oz. Manchengo cheese

1/4 C. chopped chives

1 T. olive oil

2 pinches Kosher salt

Slice the apples into matchsticks. Toss the apples with lemon juice. Cut the cheese into matchsticks. Thinly slice chives. Toss all ingredients together with olive oil and Kosher salt. Serve immediately.
