Potato Salad

12 C. cooked and shredded potatoes

12 hard-boiled eggs, sliced

1/2 onion, chopped

2 C. celery

Dressing:

2 C. mayonnaise

3 T. mustard

3/4 tsp. celery seed

3/4 C. sugar

1/2 tsp. salt

2 1/2 tsp. vinegar

Mix together shredded potatoes, diced eggs, chopped onion and chopped celery. In a separate bowl, mix together dressing ingredients. Pour dressing over potato mixture. Mix well. Chill a few hours before serving.
