2 C. flour
1⁄3 C. sugar
3 tsp. baking powder
1 C. milk
4 T. butter, melted and cooled
1/4 C. honey
Preheat oven to 400°. Place paper liners in the wells of a muffin tin. Spritz the tops with a baking spray in case muffins overflow.
Combine flour, sugar, baking powder and a pinch of salt in a medium-size bowl. Combine egg and milk, add to dry ingredients, mix in butter, then honey until dry ingredients are just moistened. Do not over-mix.
Fill the liners about half way with batter. Bake for about 15 minutes. Test with a toothpick to ensure they’re baked all the way through. Makes 1 dozen.
