5 C. apricot, chopped

1/4 C. lemon juice

7 C. sugar

1 pkg. Sure-Jell Pectin

1/2 tsp. butter (to prevent foaming)

Stir pectin, diced apricots, lemon juice and butter in saucepan. Bring mixture to full rolling boil on medium to high heat, stirring constantly. Add sugar to fruit mixture in saucepan. Return to full rolling boil for a minute, stirring constantly.  

Remove from heat and ladle into prepared jars. Place jars in water bath for about 10 minutes.

Remove and let set for about 24 hours.
