Ingredient amounts depend on desired quantity:

Ground sausage (optional)

1 quart paste tomatoes

Sweet peppers





Four to five garlic cloves

Bring tomato juice to a boil in a saucepan over medium heat with the lid off. Reduce heat to low to begin simmering.

Brown sausage in a skillet over medium heat and add to simmering sauce.

Chop the onion, an equal amount of sweet peppers, and four or five cloves of garlic. Sauté in sausage skillet until soft, adding a bit of olive oil if necessary. Add the veggies to tomato sauce and continue to simmer.

Add basil and oregano to sauce. Continue to simmer the sauce, stirring occasionally. Simmering time depends on the tomatoes used, but go for around six hours (“You can enjoy your favorite old movie, feed the fireplace, listen to the wind howl and enjoy the smell of your stovetop creation filling the house, all while stirring the simmering pot occasionally.”)

The sauce will be “done” when it bubbles like lava or strawberry jam. “Nice thick sauce is my goal.”
