1/4 C. quinoa

1/4 C. diced red pepper

1/4 C. diced white onion

1/2 tsp. garlic (one clove)

1 1/2 tsp. extra virgin olive oil

8 oz. each ahi tuna steaks

Sesame seeds

Salt and pepper

For glaze:

1/4 C. apple cider

1 1/2 tsp. Hoisin sauce

To prepare quinoa, rinse in cold water, drain, and bring to a boil in water that is double the amount of quinoa used. Reduce to simmer for 10 minutes or until the liquid is absorbed. Add pepper, onion, garlic and olive oil.

Season the tuna with salt and pepper and coat with sesame seeds. Heat oil in a large skillet over medium-high heat. Add tuna to pan; cook 3 minutes on each side or until desired degree of doneness. Mix apple cider and hoisin sauce to glaze the tuna.

Plate on a serving of quinoa.
