Chicken Tortilla Soup

2 T. butter

1/2 medium onion (chopped)

1, 10 oz. can Ro-Tel tomatoes

1, 15 oz. can yellow corn (drained)

1, 15 oz. chicken broth

1, 15 oz. can Mrs. Grimes or Bush’s black beans

1, 8 oz. can Hunts tomato sauce

1 tsp. chili powder

1/2 tsp. red pepper flakes

1 C. chunky salsa

2 C. cooked chicken, cut-up (add more if desired)

Topping:

Sliced avocado

Sour cream

Shredded cheddar cheese

Tortilla strips

In stock pot, heat butter and sauté onion. Add tomatoes, corn, broth, beans, tomato sauce, chili powder, red pepper flakes, salsa and chicken. Simmer for a few minutes, stirring occasionally. Serve and top with your choice of avocado, sour cream, shredded cheese and tortilla strips.
