Banana Nut Bread

2 C. all-purpose flour

1 tsp. baking soda

1/2 C. unsalted butter

1 C. sugar

1⁄8 tsp. salt

1 tsp. vanilla

1 tsp. lemon zest

2 eggs, beaten

3 ripe bananas, mashed

1 C. chopped walnuts

Combine flour and baking soda. In a separate bowl, beat butter and sugar until light and fluffy. Add salt, vanilla, lemon zest and eggs until blended, then add mashed bananas. Add flour mixture to banana mixture until ingredients are just moistened.

Stir in nuts and spoon batter into greased 9x5-inch loaf pan. Bake at 250° for 1½ hours or until bread tests done.
