3 C. flour

2 tsp. baking soda

1 tsp. salt

1/2 tsp. cinnamon

2 C. sugar

3 eggs

1 C. vegetable oil

2 tsp. vanilla

1, 20 oz. can crushed pineapple with juice

1/2 C. coconut (optional)

1/2 C. walnuts

Mix flour, soda, salt and cinnamon and set aside. Combine sugar, eggs, oil and vanilla and beat until creamy. Add pineapple, nuts and coconut. Mix about 1 minute.

Pour batter into greased 9x13-inch pan. Bake at 350° for 45-50 minutes; cool and frost (recipe below) then sprinkle with nuts.

For cream cheese frosting:

8 oz. cream cheese (room temperature)

1 tsp. vanilla

1/2 C. butter

2 C. powdered sugar

Whip cream cheese, butter and vanilla for about 2 minutes; beat in powdered sugar. Add more or less sugar to desired consistency.
