Sweet Potato Brownie Bites

1/2 C. sweet potato or pumpkin puree

1 small avocado

2 eggs

1/4 C. honey

2 T. coconut oil, melted

3 T. coconut flour

1⁄3 C. cocoa powder

1 1/2 tsp. baking soda

1/4 tsp. salt

1⁄3 C. mini chocolate cups, with additional 1/4 C. for the topping

Blend sweet potato, avocado, eggs, honey and coconut oil. I use a blender. Add coconut flour, cocoa powder, baking soda and salt. Stir in chocolate chips. Pour into lined muffin tin. Sprinkle the top of each with chopped chocolate chips. Bake 15 minutes at 350°. Makes two dozen mini cupcakes.
