Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1/2 cup water
  • 1 tsp vanilla
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Filling

  • 2 cups chopped dates
  • 3/4 cup water
  • 3/4 cup sugar

Directions

  1. In a saucepan, bring dates, water and sugar for filling to a boil. Cook until thick, then set aside to cool.
  2. In a bowl, mix the shortening and sugars until combined. Then add eggs, water and vanilla.
  3. After mixing the flour, salt, soda, and cinnamon in a separate bowl, combine it with the wet ingredients, mixing well.
  4. Drop dough by teaspoonfuls onto a cookie sheet, reserving a small portion. Top each dough mound with ½ tsp of the filling, then carefully spread ½ tsp of reserved cookie dough on top, sealing in the filling.
  5. Bake cookies at 350 degrees for 11- 12 minutes.
