1 cup sugar
1/3 cup dry pancake mix
4-5 cups chopped rhubarb, cut into ½-inch pieces
¾ cup dry pancake mix
2/3 cup sugar
¼ cup melted butter
Combine the sugar, dry pancake mix and rhubarb in a bowl and toss together. Spread evenly into a 9x9 greased baking dish.
In a small bowl, combine the pancake mix, sugar, and egg for the topping until it resembles coarse crumbs. Spread onto the rhubarb mixture, and drizzle with melted butter.
Bake at 375 degrees for 35-40 minutes.
