Ingredients

 1 cup sugar

 1/3 cup dry pancake mix

 4-5 cups chopped rhubarb, cut into ½-inch pieces

Topping:

 ¾ cup dry pancake mix

 2/3 cup sugar

 1 egg

 ¼ cup melted butter


Directions

 Combine the sugar, dry pancake mix and rhubarb in a bowl and toss together. Spread evenly into a 9x9 greased baking dish.

 In a small bowl, combine the pancake mix, sugar, and egg for the topping until it resembles coarse crumbs. Spread onto the rhubarb mixture, and drizzle with melted butter.

 Bake at 375 degrees for 35-40 minutes.
