• 1 pound ground beef OR raw cut up chicken in bite-size chunks
  • 1 tablespoon vegetable oil
  • 1 cup chopped peeled onions
  • 2 eggs
  • 1/8 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds zucchini
  • 2 tomatoes, peeled and sliced
  • 1 cup bouillon or water

Stir the meat into hot oil, stir and cook for five minutes. Add the onions, stir and cook 10 minutes. Remove from heat. Beat the eggs; add to meat with parsley, salt and pepper. Mix well. Wash the zucchini; cut lengthwise into narrow strips. Place a layer of zucchini in a two-quart buttered casserole Add layer of meat mixture; repeat layers. Cover top with sliced tomatoes. Pour the bouillon or water over all. Cover and bake in a 375 degree oven for 45 minutes. Uncover and bake 15 minutes longer.
